Chef James Trees grew up in Las Vegas, trained in the kitchens of Daniel Boulud and Nancy Silverton, and came home to open Esther's in 2018 — naming it after his great-aunt. The result is the rare Vegas restaurant that feels genuinely local: handmade pasta cut daily, bread from the in-house sourdough program, and produce from a network of small Nevada and California farms. The wine list leans natural, the room hums, and weekend brunch is the toughest reservation in the 702.
